Pique criollo recipe (Puerto Rican style) made with the skin of pineapple?
does anybody have this recipe. Some ingredients are pineapple skin, hot pepper (variety) garlic ... see ..... http://en.wikipedia.org/wiki/Pique_criollo I can not find this recipe on the Internet at all ... in puerto rico they sell the liquid in bottles of liquor little spicy for about 2.50. It's a bit like Tabasco, but better.
INGREDIENTS: 20 Scotch Bonnet tops removed, halved 5 ajicito, tops removed, halved 8 cloves garlic, crushed 2 tablespoons olive oil 1 medium onion, rough chopped 8 sprigs cilantro, chopped (about 1 / 4-1 / 2 cup) 2 sprigs RECAO 1 / 2 teaspoon salt 1 / 2 teaspoon black pepper 1 / 2 teaspoon unsweetened cocoa 1 / 2 cumin powder 1 / 2 teaspoon oregano, crushed 6 tablespoons lime juice 1 / 4 cup vinegar (I prefer cider vinegar) 1 / 4 of tequila, white wine, champagne, rose wine, or rum 1 cup pineapple 1 teaspoon juice sugar DIRECTIONS: Sautee caballeros aji (Scotch Bonnet), ajicitos, 1 / 4 of onion and garlic in olive oil for 2 minutes. Let Cool. Add remaining ingredients in blender until smooth. For a thinner consistency, add more lime juice or pineapple juice. Let stand at least one week before using to blend flavors. More hot sauce sits .... hotter it gets. This will take several weeks if stored in the refrigerator.
